Shrimp Tostadas

If you join the mailing list for Stonyfield Organics they'll give you a $1.50 off coupon. I was in search for an organic yogurt when I found their devious recipe for Shrimp Tostadas with Lime Crema.


INGREDIENTS:
1 package.................Organic Tortillas
1/4 cup......................Lime Juice
2tsp...........................Zest of a Lime
3/4 cup......................Stonyfield Organic Yogurt (0% fat)
1/4 cup......................Organic Sour Cream (low fat)
1/2 tsp.......................Salt
1lb.............................Medium Shrimp (Peeled/Deveined)
2tsp...........................Chilian O-Live & Co Olive Oil
1 1/2 cup...................Shredded Cabbage
1 1/2 cup...................Shredded Carrots

READY IN: 35 Minutes
SERVES: 6
WEIGHT WATCHERS POINTS: 2 (Per Serving)

Instead of making the Lime Crema I simply combined some of the yogurt, and sour cream with my fresh picked cilantro and added some pepper to taste.

Prepping the Lime Zest Mixture.

DIRECTIONS:
  • STEP 1
  • Set oven to 425.
  • Coat 2 baking sheets with Non-Stick Cooking Spray.
  • Place 3 tortillas on each pan.
  • Bake for 10 minutes and flip halfway through baking.
  • STEP 2
  • In a bowl stir lime juice and zest.
  • In another bowl stir together yogurt, sour cream, 1/4 tsp salt, and 1/2 of the lime juice/zest mixture together and set aside.
  • Place shrimp and lime juice mixture into a sealable bag and toss.
  • Allow shrimp to marinate for 5 minutes.
  • Heat oil in a large skillet over medium-high heat.
  • Sprinkle shrimp with remaining salt and cook.
  • Stir shrimp often for 3-4 minutes until cooked.
  • STEP 3
  • Divide shrimp among tortillas.
  • Add shredded cabbage/carrot.
  • Drizzle with garnish of choice. (Yogurt/sour cream/cilantro/pepper mixed.)

I wrote the recipe with a mild flavor, but you could spice it up easily with sliced jalapeños or hot sauce. The yogurt and sour cream calm down the spice making it very tasty regardless of your spice level. 😍 

The tortillas bake in such a way that you could really make so many wonderful recipes using them.They'd be great for a Tostadas of any combination, but can also be used for flatbread recipes with ease.
