    May the Fourth Be With You! Are you with the Dark Side? Even if you aren't with the Empire, a member of the Republic should enjoy this dark chocolate cake!

    This gluten free, flourless chocolate blackberry cake packs the perfect punch of sweet and spicy.

    When blackberries are in season, I love making the drive to Solebury Orchards where they have thornless blackberry bushes. We'll get large flats and fill them to use for jams and jellies. While not in season, we always gravitate to Driscoll's for their quality and organic fruit.

    If you've made a torte before, you'll know how rich they can be. Adding a bit of fruit with a spicy kick to this recipe make the flavor more blended with a bit of warmth from the Cinnamon and Cyanine.

    If you're with Weight Watchers, I will say right now that this is not a point friendly recipe, but you can lowered in points significantly by cooking with substitutes for the ingredients that I've listed.

    An example would be Wholesome Organic Zero Calorie Sweeteners. If you signup on their website you'll save 10% off of your purchase. You can use a sugar substitute and their organic honey.


    INGREDIENTS:
    1 x 12oz bag........................Dark Chocolate
    7 oz......................................Butter
    1 1/3 cup..............................Sugar
    5...........................................Eggs
    1 tbls....................................Cocoa
    1/2 tsp..................................Cinnamon
    1/4 tsp..................................Ground Cloves
    1/2 tsp..................................Cyanine Pepper
    1/8 cup.................................Heavy Cream
    .............................................Blackberries
    .............................................Honey

    23 Points Per Saving (Without substitutes)

    Once chocolate is melted pour in sugar or sugar substitute.
    Angel the Corgi would love to taste test.
    Allow cake to cool before adding the topping.

    DIRECTIONS:
    • Preheat the oven to 375 degrees, and butter a 9-inch springform pan. Line the base and sides of the pan with organic baking spray or buttered parchment paper.
    • Mash some of the blackberries and leave a few to garnish. Set aside the mashed blackberries.
    • Use 7oz of the dark chocolate chips and set aside 3oz for the topping. Melt it gently with the butter in the microwave, stirring regularly until completely melted. Add sugar to the chocolate-butter mixture, stirring well, and set aside to cool down for a moment. After a few minutes add the eggs one by one. Stir well after each addition. Add cocoa, mashed blackberries, cinnamon, cyanine, and cloves, mix until incorporated.
    • Pour batter into the buttered cake pan and bake for 25 minutes, or until the center of the cake looks crackly-looking and jiggles slightly. Let the cake cool in the pan on a rack for 10 - 15 minutes and remove springform. Allow to cool completely. The cake will deflate a bit as it cools.
    • Mix remaining chocolate with heavy cream. Cover the top of the cake and allow this to cool.
    • Serve with a drizzle of honey and blackberries and enjoy.

    If you join the mailing list for Stonyfield Organics they'll give you a $1.50 off coupon. I was in search for an organic yogurt when I found their devious recipe for Shrimp Tostadas with Lime Crema.


    INGREDIENTS:
    1 package.................Organic Tortillas
    1/4 cup......................Lime Juice
    2tsp...........................Zest of a Lime
    3/4 cup......................Stonyfield Organic Yogurt (0% fat)
    1/4 cup......................Organic Sour Cream (low fat)
    1/2 tsp.......................Salt
    1lb.............................Medium Shrimp (Peeled/Deveined)
    2tsp...........................Chilian O-Live & Co Olive Oil
    1 1/2 cup...................Shredded Cabbage
    1 1/2 cup...................Shredded Carrots

    READY IN: 35 Minutes
    SERVES: 6
    WEIGHT WATCHERS POINTS: 2 (Per Serving)

    Instead of making the Lime Crema I simply combined some of the yogurt, and sour cream with my fresh picked cilantro and added some pepper to taste.

    Prepping the Lime Zest Mixture.

    DIRECTIONS:
    • STEP 1
    • Set oven to 425.
    • Coat 2 baking sheets with Non-Stick Cooking Spray.
    • Place 3 tortillas on each pan.
    • Bake for 10 minutes and flip halfway through baking.
    • STEP 2
    • In a bowl stir lime juice and zest.
    • In another bowl stir together yogurt, sour cream, 1/4 tsp salt, and 1/2 of the lime juice/zest mixture together and set aside.
    • Place shrimp and lime juice mixture into a sealable bag and toss.
    • Allow shrimp to marinate for 5 minutes.
    • Heat oil in a large skillet over medium-high heat.
    • Sprinkle shrimp with remaining salt and cook.
    • Stir shrimp often for 3-4 minutes until cooked.
    • STEP 3
    • Divide shrimp among tortillas.
    • Add shredded cabbage/carrot.
    • Drizzle with garnish of choice. (Yogurt/sour cream/cilantro/pepper mixed.)

    I wrote the recipe with a mild flavor, but you could spice it up easily with sliced jalapeños or hot sauce. The yogurt and sour cream calm down the spice making it very tasty regardless of your spice level. 😍 

    The tortillas bake in such a way that you could really make so many wonderful recipes using them.They'd be great for a Tostadas of any combination, but can also be used for flatbread recipes with ease.

    Ever have a bad week at work and think, "Tonight is a Margaritas kind of night?" (Maybe I'm the only one, haha.)

    This drink recipe will have your friends, family, and coworkers talking for weeks after your next social gathering.

    DRINK INGREDIENTS
    1 bottle..................Tres Agaves Organic Margarita Mix
    1 bottle..................Tequila
    1/4 bottle...............Triple Sec
    1 1/2 cup...............Blackberry Purée

    GLASS GARNISH
    1/2.........................Lime
    1/4 cup..................Sugar
    2 tbs......................Salt
    3............................Blackberries

    I had frozen Blackberry Purée that I had already made and allowed it to thaw. You can always mash up your favorite berry combination for this recipe if you don't have access to an immersion blender. Just be sure to strain our the seeds before mixing.

    We had a skull decanter in the garage and used that for decoration, but you can always just pour the drink into a pitcher with ice and enjoy.




    DIRECTIONS:
    • Combine Tres Agaves, Tequila, Triple Sec, and Purée into a pitcher and stir together.
    • Chill and serve with ice. 
    • Combine sugar and salt onto a plate.
    • Wet the rim of your glass with the lime slice.
    • Press into the sugar/salt for the perfect salt/sugar ring around your glass.
    • Garnish with blackberries and enjoy!

    The day is here! It's May 1st, 2018 and I'm posting the first of many recipes to this blog. Be sure to follow along on Bloglovin, YouTube and Instagram for continuous updates.

    Lamb Babacoa is a traditional meal served during Cinco de Mayo. I find this recipe to be easy to do as you simply prep it for your slow cooker and let it do all of the work! Great for after a stressful day at work, or for your Cinco de Mayo gathering.

    If you're not a fan of lamb, or are looking for something more economical and/or diet friendly, you can substitute for chicken or pork with this recipe. Weight Watchers points listed below.

    While I'm linking to organic ingredients, you can shop and buy as you need to for your budget. I will always encourage you to live an organic lifestyle, but from personal experience, I know that you can't switchover your diet and food budget overnight.

    We ventured to Wegman's in North Wales where a wonderful man from the meat department found organic lamb shoulders for us. You'll need 3lbs of lamb or your substituted choice to cook with. We also picked up ingredients at WholeFoods, Aldi, and Giant.


    I have a small raised bed on the side of my home where I grow organic herbs. Cilantro (Coriander) is already available for me to harvest and adds great flavor. If you're not a fan of the taste, it's always a nice garnish.

    Last summer I made and canned salsa and used that as a garnish for the recipe. Once the tomatoes and peppers have ripened I will type up my sasla recipe for everyone. Use whatever garnishes that you prefer on a barbacoa or taco. I hope that you enjoy this first recipe as much as my family and I have.

    ORGANIC INGREDIENTS:

    3 lbs........................Lamb Shoulder (Or substitute for your meat of choice!)
    1 chopped...............Onion
    1/3 cup....................Lime Juice
    8 oz.........................Tomato Paste
    1 1/2 tbls.................Apple Cider Vinegar
    1/2 tsp.....................Chili Powder
    1 tbls.......................Cumin Powder
    4 minced.................Garlic Cloves
    1 tsp........................Salt
    1 tbls.......................Oregano
    1 qt..........................Beef Stock
    3..............................Bay Leaves
    1 tbls.......................Whole Cloves
    1..............................Potato


    GARNISH INGREDIENTS:
    1 cup.......................Rice
    1..............................Avocado
    ................................Tortillas
    ................................Salsa
    shredded.................Carrots
    shredded.................Cabbage
    chopped..................Cilantro
    1..............................Lime


    Follow the blog for the Blackberry Purée Margarita!

    DIRECTIONS:

    • Combine onion, tomato paste, apple cider vinegar, lime juice, chili powder, cumin, garlic, salt, and oregano in a food processor. Blend until well combined and mixture forms a paste.
    • Slice a 1/4" deep line into potato. Easily push Cloves into potato without hurting your thumbs!
    • Transfer mixture to a slow cooker and add half of the beef stock. Place meat into slow cooker and add more stock until the meat is covered.
    • Add potato cloves side down into the stock
    • Add bay leaves, and cook on low for about 5 hours.
    • To serve, shred the meat with two forks and place in serving dish.
    • Garnish your Barbacoa how you like & enjoy!


    WEIGHT WATCHERS POINTS PER SERVING:
    Lamb - 11
    Pork - 9
    Chicken - 4



    ADDITIONAL POINTS (
    substitute or add additional points):
    Avocado (3 points for 1/4)
    Tortillas (3 points for 1)
    Rice (1 point for 1/8 cup)



    OPTIONAL:
    Before you begin. I suggest you prep this a day ahead of time allowing it to cool in the fridge overnight. Why? You'll cut down on a lot of fat! Once the crockpot cooked the meal, I allowed it to cool and then placed it into the refrigerator overnight. The fat floats and hardens to the top. Before reheating, remove the fat and cut down on a good chunk of calories regardless of the meat you choose to cook with! 😻

    Just look at all of the fattening calories we cut from this meal!

    My name is Kathy Smith, and this June I will be turning 60 years old. I'm not a young mom blogger, but I am a mother who strives to live an organic life and I hope to share my recipes and gardening tips with all of you.

    In 2014 I was diagnosed with Dermatomyositis and struggled with weight gain from the steroids that I had been placed on to treat the disease. During this time my daughter, Rachel was in school studying filmmaking, and has always been a talent with the camera. Seeing pictures of myself from years before the diagnosis to the time I was on medication was upsetting to say the least.
      2011-2016

    In the winter of 2014, Rachel had been hired as a videographer on a documentary that fought for GMO Labeling on food packaging. She came home one weekend and completely purged the house of everything genetically modified and artificial. We're talking, everything. We donated the non perishables and left the rest of our food in boxes at the mailroom for anyone who needed the items. Rachel made sure to leave a few passive warning labels on those boxes as well, naturally.

    Since then, many companies volunteer for the NON-GMO label, and have started to go organic. I have done a lot of research, lost some of the weight so far (Thank you weight watchers!), changed my eating habits and the ingredients I cook with. I gather herbs and produce from my little garden and local organic farms/farmers markets. I use fresh meats and cheeses and have introduced alternatives to my former baking favorites.

    I cannot wait to share these journeys that I've made with all of you. At the very least, I hope that this blog will be educational for anyone who wants to live a healthier, real food lifestyle. I'll be writing recipes and linking to the organic ingredients that I cook with, but also heavier, and non-organic alternatives for the budget shopper.

    Living organic can be expensive, but don't let that stop you! I'll share websites to organic companies who will gladly send coupons and even free samples for you to try and enjoy. We can learn together, and live healthier while eating delicious food.
